In late February, I opened a bottle of wine, had a glass, sealed the bottle and left t it on the counter.
In mid-March, I opened an identical bottle, then opened five more bottles from March 30 to April 6.
How long does the unused wine last?
I have some unscientific data for you.
Why unscientific? Well, I opened only seven bottles of wine, a grocery store cabernet sauvignon called Gato Negro, 2013. I paid about $4 a bottle for it. I don't think this is great wine; I'd give it a C+, but that's not the point.
I wanted to see when the wine, if left on the counter, would start to taste weird.
The wine tasted a bit different a day after being open, and stayed that way until Day 3. On the seventh day, the wine had started to oxidize. It reminded me of that bottle of wine my mom had sitting on the counter for weeks and weeks. It was the wine I sneaked a sip of when I was about 12, and it convinced me that alcohol tasted nasty.
The two oldest bottles, open for 19 and 41 days, had turned to the dark side, with a foul smell and flavor. Wine this old, provided there are no weird microbes in it, won't make you sick, but it's best to dump the stuff if you find a weeks-old open bottle of wine in a cupboard.
I swallowed a little of the 41-day-old wine and am happy to report I felt fine a day later.
So, how long will your open wine keep?
This subject gets so much debate it borders on absurd. I'm convinced that an open bottle of that wine, left on the counter even for just overnight, would have changed so much it would have been a waste.
If you have an old bottle sitting on the counter for a special occasion, plan on finishing it the night you crack that bad boy.
Longtime readers know
I freeze opened wine, and have had good success for as long as six months. I finished off the end of a Riesling bottle last week that had been in deep freeze since November. Tasted excellent.
